Hey thanks for the recipe……I will try your vege-chili it looks good….I make a vege-chili using the 16 bean dried bean soup mix. I quick soak the beans then discard the water, saute 1 large onion diced, 1 large green pepper diced, 1 large red pepper chili peppers and garlic diced, add bay leaf, chili powder, cumin, cinimon stick, brown sugar, lg can of crushed tomatoes, sm can of diced tomatoes (unless I have lots of fresh laying around), 1 lb. of frozen mixed vegetables and a quart of water and let it simmer for 1 hour after that. Barley is a great idea….it would work with my recipe too. I like having all of the different kinds of beans. Yours looks quicker than mine…..but you should definitely try the 16 beans.
